<p>Ingredients:<br />4 eggs<br />1 cup granulated sugar<br />1/4 cup and 2 Tbsp STAR Extra Light Olive Oil<br />1 2/3 cups unbleached white flour<br />1 Tbsp baking powder<br />zest from 1 lemon<br />1 Tbsp milk</p>
<p>Preparation:<br />Preheat the oven to 375 degrees Fahrenheit (200 degrees Centigrade). Measure 1/4 cup sugar into small bowl and set aside.<br />In a medium-size mixing bowl, beat the eggs with 3/4 cup sugar. Beat until the mixture is light. As you continue to beat the egg mixture, slowly pour in STAR Extra Light Olive Oil, making sure to mix thoroughly. Stir in the lemon zest and milk.</p>
<p>Measure out the flour into a separate bowl. Add the baking powder to the flour and mix thoroughly.<br />While stirring the egg mixture, add in the flour mixture. Continue to stir until all ingredients are mixed well. The batter will be very thick.</p>
<p>Place paper liners in to cupcake pan. Use a large serving spoon to spoon batter into pan, filling each one half full. Batter will more than double in size when baked. Use a teaspoon to sprinkle each magdalena with a bit of the reserved sugar.</p>
<p>Place pans on the middle shelf of the preheated oven for 18-20 minutes, until magdalenas have turned a golden color. Remove from oven and allow to cool for 5 minutes before taking out of the pan to cool further</p>
<p>Serves 9. Yield is 18 magdalenas.

<ol>
<li class="instruction">Preheat oven to 375 degrees. Separate the 5 eggs and beat the egg yolks with sugar in a large bowl for 3 or 5 minutes, or until very light in color. Mix in the orange and lemon zest. Set aside.</li>
<li class="instruction">Combine flour and salt, and sift a little at a time into the sugar and egg mixture, beating continually until it is incorporated. Add the dessert wine and the olive oil in the same fashion. In a separate bowl, beat the 7 egg whites until they stand in stiff peaks, and then gently fold them into the mixture thoroughly.</li>
<li class="instruction">Line the bottom of an 8-inch springform pan with parchment. Butter the lower ¼ of the sides. Pour the batter into the pan, making sure it is well distributed. Bake for 20 minutes. Lower the oven temperature to 325 degrees and bake for an additional 25 minutes. Turn off the oven and leave the cake in the closed oven for 10 minutes more while the cake slightly collapses.</li>
<li class="instruction">Remove from oven and allow cake to cool for 10 minutes. Invert the cake onto a flat surface. Let it cool completely before serving. Serve with strawberries or other fresh fruit tossed in dessert wine along with vanilla ice cream or a drizzling of crème anglais.</li>

<li class="instruction">Sift dry ingredients together. In medium bowl, beat olive oil, gradually adding honey. Alternately fold in dry ingredients and juices, using about a fourth each time. Pour into oiled and floured 9 inch round cake pan. Bake about 30 minutes or until cake tests done. Cool completely on rack before removing from pan. Dust with sugar. Serve with fresh fruit if desired.</li>

<li class="ingredient">Filling:</li>
<li class="ingredient">2 large eggs</li>
<li class="ingredient">3 large egg whites</li>
<li class="ingredient">1 cup sugar</li>
<li class="ingredient">1/2 cup fresh lemon juice</li>
<li class="ingredient">3 tsp. freshly grated lemon zest</li>
<li class="ingredient">Fresh berries, for garnish, if desired</li>
<li class="ingredient">Whipped topping, if desired</li>

<li class="instruction">Position rack in upper third of oven. Preheat 375°F.</li>
<li class="instruction">Crust: In a bowl, mix oil and ¼ cup flour until smooth. Add remaining flour, sugar, baking powder and salt. Using a pastry blender, mix the ingredients together until crumbly.</li>
<li class="instruction">With a fork, stir in the vanilla and the milk, 1 tablespoon at a time, until a soft dough forms. Turn dough on to a lightly floured surface and gently knead. Press into disk.</li>
<li class="instruction">Spray a 10 or 11 inch tart pan with non-stick spray. On a lightly floured surface, roll out dough into a 12 inch circle. Carefully place dough in the prepared pan. Press to fit. Trim the edges of excess dough. Cover the crust with foil and weight with pie weights or dry beans. Place tart on a baking sheet. Bake crust for 10 to 12 minutes, or until set, but not at all browned. Remove foil and pie weights and set crust aside on the baking sheet.</li>
<li class="instruction">Filling: In a mixing bowl, whisk eggs, egg whites and sugar until smooth. Slowly whisk in lemon juice and zest. Pour filling into partially baked crust. Bake tart about 20 minutes or until the crust is golden and the filling is set. Cool on a wire rack for at least 10 minutes.</li>
<li class="instruction">Serve with fresh berries or whipped topping.</li>

In small saucepan, bring 3 Tbsps olive oil, cream and sugar to boil, stirring until sugar dissolves. Remove from heat. Stir in flour and all almonds. Drop by rounded teaspoonfuls about 2” apart on oiled and floured baking sheet. With back of wet spoon, flatten each mound to 1 1/2” circle. Bake until edges are deep golden, about 10 minutes. Cool slightly then carefully transfer to cooling rack. In top of double boiler set over simmering water, place chocolate with remaining tsp oil. When melted, drizzle over cookies with fork or dip half of each cookie into chocolate. Let stand until chocolate is set, about 2 hours. Serve with fruit or sorbet, if desired.</li>
